Are you setting the partition scheme as GPT and target system as UEFI (non CSM)?

Apologies as I'm very new to all of this - How can I tell if the partition scheme is GPT on my Windows 10 Bootable flashdrive? I did not see an option to toggle MBR or GPT when using Microsoft Media Creation Tool. (when trying Ubuntu I did see MBR vs GPT option in rufus and tried both as two tutorials had me do it differently).

The Media Creation Tool uses UEFI, I don't know about GPT though.
