Normally I would cook chicken pieces directly over the flame for 5-10 minutes to get them charred, then I move to the cool area and cook with lid on for another 15 minutes or so... How do I achieve this same result on the Woodfire Grill?

There is a grill setting which is blazing hot and is great for the first part, but then what am I supposed to do? After 10 minutes what setting am I supposed to choose to get the chicken cooked fully, and also at what point do I ignite the pellets?
