ELI5:How do style names work in Ancient China? When should you use them?

I recently got into the 3 Kingdoms era and ROTK, and I've noticed every character had multiple names, on top of their regular one, (such as Cao Cao -> Meng De) and all of their names are used to refer to them at some point. How does this work? What are the etiquette with using the names?
