Ginger ale and ginger beer making on a nanobrewery scale
Hello to the good folk of The Brewery. I would be most grateful for your time, ideas and suggestions about my question.
Me and a couple of friends are starting a nanobrewery. Apart from our everyday brewing operation, I am thinking of adding non-alcoholic Ginger Ale and/or Ginger Beer to our list of products. There is no such producer in our region, and the demand is quite strong, so hell why not?!
I've scrolled through the internet and most I can find is homebrew scale recipes. I don't know how these scales up to even our nano volumes. From what I figure, a good brew kettle with false bottom and a pressurized fermenter is good enough to do the job. We have a good SS brew kettle for 200 liters (50 gallons) and would like to use this for our "experiment".
So now comes the question: is it possible to make non-alcoholic Ginger ale/beer on a nanobrewery scale, will it have and how to maintain feasible shelf life of the product and the most important, where can I find a proper recipe or at least learning recourses about this.
I would appreciate any kind of information. This is my first reddit post btw, Cheers!
