Chocolate loaf
50g cocoa powered bloomed with 100g coffee. 100g starter, 340g water, 500g AP flour, 1/4 cup brown sugar and 10g salt, added chocolate chips and measured with my heart. Bulk fermented about 6 hours, rested overnight in the fridge then baked at 450 30 min covered and 20 uncovered. It’s not very sweet and a little bitter but I had a slice with cream cheese and cinnamon. I enjoyed my husband not so much.
