Are y’all dipping your crawfish.
I’m from Lake Charles, my parents are from Eunice and Basile, their last names are among the Louisiana First Families, I lived in Lafayette for a decade. If there was a certified Cajun I’d like to think I’d at least be honorable mention. I always dip my boiled crawfish in a concoction of mayo, ketchup, and garlic power.
I get looked at sideways in New Orleans whenever I even bring up the idea of crawfish dip. Nola isn’t exactly the arbiter of what’s Cajun but I can’t help but feel shamed.
My question is, if you’re eating boiled crawfish, are you dipping?
