How do you jazz up your ramen?
Saw a coworker the other day putting plain water and crappy brand ramen in the company microwave. I asked him what spices he was going to use and was told desperate food should taste desperate. So what do you do to jazz up your ramen.
I personally make poor man's chipotle.
Toast cumin seeds, red pepper flakes in a frying pan under medium heat. Add aprox 1 tsp of coconut oil, swirling pan to cover as much of the pan as possible. Fill with water so that ramen will not touch bottom of pan. Add chili powder, paprika, garlic powder, onion powder, and a splash of vinegar or pickled jalepeno juice. Gently scrap bottom of pan with a plastic utensil ensure no stickage to bottom of pan. Place ramen in pan and allow water to come to boil. After aprox 3 mins use tongs to gently flip top of ramen over to submerge under liquid. After aprox 2 mins gently pull out ramen from pan, draining as much liquid as possible in pan, and place in bowl. Splash a little sesame oil, furrakake(toasted sesame seed and shredded nori) on ramen and mix well. When liquid comes to boil reduce heat and allow to simmer to desired taste and consistency. Turn of heat and pour liquid into bowl with noodles. Garnish with chives. If I have it in the fridge I add a halved harboiled egg and pickled ginger
