Skipping ML on cab?
I have a cab that I’m fermenting right now. Initial read before yeast inoculation was really high ph (3.94) and low TA (.4). If this doesn’t move the right direction during fermentation, I’m wondering if I need to skip adding MLB and prevent it from happening on its own too. Will this throw off the profile of the cab though? I was hoping to produce a big, bold, classic cab.
I imagine I’ll have to do quite a bit of tartaric adjustment either way…
