Can we make a go-to thread for off-Strip hotels with casinos? Places like Red Rock, Ellis Island, South Point, etc.

I've been to Vegas probably 40 times but I've only stayed on the Strip and wanted to branch out a bit. I hear about these smaller places droppef into threads but I wanted a more comprehensive list. Can you tell us what places you recommend and why?
