Biggest Sous Vide bath I've ever used.
I made ham from a pork loin, but while smoking them, I realized my usual water bath wasn't going to be big enough. After searching my house, I used a new 10-gallon tote and filled it with the hottest water. It took nearly an hour to reach the right temperature. I placed silicone pads underneath and used baking pans as lids.Once the hams were done smoking, I vacuum-sealed them and placed them in the water bath for 4 hours. The ham turned out amazing and perfectly tender. I'll be getting a dedicated ice chest for larger sous vide baths in the future, but this worked surprisingly well!
