Looking for next solo travel destination

Hey girls

I have solo traveled before but feel quite rusty. I know I need to start with an easy country which is relatively safe.

I have already been to most places in Europe and to Vietnam, Laos, Cambodia, Thailand. I would love to go to Latin America but feel it might be a bit too much to start with.

Do you have any recommendations of a place I could go to get myself back in the groove of travel ?

edit: would love a place with sunny weather and where I could also chill by the beach/in nature and relax doing my own things. Don't need to be on the go all the time.
