A few questions about food safety in Mexico

Questions on safety with certain foods in Mexico:

WRT "over medium" eggs -- I always buy the better eggs at my tienditas (San Juan brand where I am; don't know if they're national). I like my fried eggs 'over medium' and hard boiled eggs about the same way. I've done that a few times while down here with no consequences, but are the quality eggs consistently fairly safe for this?

Similar question for Mexican beef. Back home, I like my burgers and steaks medium-rare to rare. I quickly learned my lesson about not trying that EVER with beef from carnecerias. I've not pushed it too hard with supermercado beef (medium-rare at most), and haven't had any problems over my five years here. Will that be fairly consistent too?
