Heavy cream additives
I’ve been learning as much as I can about stabilizers and experimenting to find my perfect mix. My problem right now is I can’t find ANY heavy cream that doesn’t already contain stabilizers such as gellan gum, carrageenan and sometimes many others. Even Whole Foods has the stuff with gellan gum. I’ve had a couple of batches come out super gummy and chewy when using the lower end of the recommended amount.
My question is for those of you that can’t find pure heavy cream, what do you look for? Is there a certain brand, or a certain additive that is more ice cream friendly than the others? I want to find the best cream for making ice cream that I can. I may be going overboard, but it’s part of the fun of ice cream science and perfecting a recipe.
