Preferred Tech Stack

Hey all, I am planning on building out an app for fun and was curious what tech stack everyone uses, in particular I am trying to figure out what to use to make my backend rest API (I don't want to use firebase, want the learning experience of creating and deploying a rest API)but am not sure what is best and wanted to hear everyones thoughts and what you guys use!
