Most Balanced (eye-pleasing, you vs enemy, progression, etc...) RPG Modpack?

I know its been asked to death about certain types of modpacks, but I just wanted to put some of my own parameters. Eye-pleasing is self explanatory. You vs Enemy is how easy / difficult it is to beat enemies. Progression as in progression systems (e.g. questbooks, gear progressions, enemy progressions). And of course the whole shibamble of QoL and optionally building stuff (I like building but I can't utilize the crazy building mods)

So far I've tried:

Prominence II - Was before the hasturian update but I noticed I never really had any troubles. Might come back to it.

Cisco's Adventure RPG - Enemys were very annoying with a ton of them using the minecraft style mutations knocking me around for no reason. Grinding is also a pain in the ass just to fight the lowest tier progression bosses, or even basic bosses in the nether. Did enjoy the origins / class choosing though.

Craft to Exile 2 - It looked promising at first but it had so many things to look at and read that it felt overwhelming. Didn't help that every other mob I killed whether passive or aggressive spawned a gate that pretty much killed me since I wasn't able to get enough gear yet. Heard it was good but left slightly dissapointed.

I am currently trying The Chocolate edition and will update depending on how I feel about it

Edit: I tried chocolate and, as I kindoff expected since its still in development, felt kind of empty. Liked it so far but the lack of certain QoLs like the usual map / minimap (dunno the name of it) and veinminer is putting me off.
