What is the Best Card at 720p Without Being Overkill?

My cpu is an i7-11700 and my PSU is 500W. I am not expecting something outrageous like cyberpunk 2077 running smoothly. I just want to play MOST AAA games and am fine with tuning down settings. What is a good budget GPU without being overkill in these requirements?
