Would this bike be suitable for a long bikepacking trip ? (South America)

Basically I am planning on cycling north to south SA with my SO. I have a large steel frame Saracen for me which has been great, but to save on buying a new bike for her I was wondering if you lot think this bike could hack it or whether it would be a stupid idea.

I recently had it serviced with new cabling put it, new derailer etc. I also added a riser as she was complaining that she felt too bent over and that has helped a lot.

We have also found that when we are on a nice even road and can go up to max gear her bike does not go as fast as mine with the same effort, but we only noticed that when we are on a nice cycle track etc.
