What happened to Grand Central Bakery?

When I was a kid, I would eat their bread plain. It was incredible. Every variety had strong, distinct flavor. Now it all tastes pretty damn flat and plain and chewy and similar.

Anybody know why the quality has declined so much over the decades? I assume it’s a familiar story — a small business grows and cuts costs until the product is degraded beyond recognition.

Is there more to it than that?
