Report: Frozen Eggs

There has been a lot of discussion here about freezing eggs as a preservation method and I wanted to share my experience.

I always have an excess of eggs from my flock over the summer, but this is the first year I've tried freezing them. I froze some in late July by scrambling them and freezing them in ice cube trays.

I've just started using them with great results. I've used them to make both fresh pasta and banana bread. You can't tell at all. The main drawback is that you have to think a few hours ahead to thaw them out for use. The other thing I've noticed is that I usually need to use the cubes at a 2:1 ratio, vs. a 1:1 ratio.

But it has definitely worked! I'd love to hear others' experiences.
