2008 Daytona 675 35k Rebuild

Currently rebuilding a 2008 675 thats going to be a dedicated track machine. i noticed oil on my #3 spark plug and low compression on piston 2. Now i dont know for a fact that that is my compression number as its a cheap gauge but i was a hair under 60 on the other 2 so #2 def is low. Original plan was just piston rings and head gasket, but do i absolutely have to split the case to do the rings? And if i am splitting the case what else should i be changing while im in there? Do i have to remachine the crankshaft for new crank bearings? Thank you for any help, this is my first ever engine job of this nature. In other news the engine bucks above 8k only at WOT, new fuel pump didnt fix. Any answers to any of this would help greatly!
