What to Keep?

As the title suggests, What should I keep?
Find my Storage fills up fast.

I was trying to keep 10 of everything but seems to be imposable.
Yes read that right. x10 of each fish, gatherable, leather, pelt, & so on.

What do you keep & How much, What also put into the Limited extra storage.

Oh I do have the max storage capacity.
