How do you make a good lasagna?

I know I can look up a recipe online - and trust me I have. I've tried a few and it never turns out how I remember my grandma's being, or what you get in a restaurant. The noodles end up crunchy in places... the ricotta mixture is impossible to spread... not enough layers.... the sauce to liquidy. I need some mom advice!
