Which places suffered from the curse of success leading to worse quality food?

I find that with some food places once they become famous, they start slacking and cutting corners to make profit from the fame, leading to lower quality food.

I’ll start with Halal Guys. 10 years ago it was great right as they were getting famous.

Roughly 5 years ago I had it and the meat and rice was so dry. I think it’s because they precook so much meat and rice to meet the demand and it just sits there on the grill drying out. Never been back since.
