Whats so special about NG+?

Never tried it before, finished the game twice with two different builds on two different saves with diff endings but I wanna go at it again for a different ending, but ive always heard NG is cool, i dont get why tho. Also, any reccomendations on which ending i should go for next? Ive gotten age of fracture and age of order so far
