[Homemade] Brown sugar cinnamon rolls

Dough: All purpose flour (250g) Bread flour (50g) Brown sugar (30g) Cinnamon powder (2g) Dry yeast (3g) Water (135ml) Egg (1) Butter (20g) Salt (3g)

Cinnamon stuffing: Brown sugar (40g) Butter (35g) Cinnamon powder (3g) Coconut flour (5g)

Cinnamon stuffing:

Brown sugar 40

Butter 30

Cinnamon powder 3

Almond powder 5

1️⃣First rise at 30 degrees for half an hour

2️⃣Sprinkle flour to prevent sticking, roll it into a square, and refrigerate it for 20 minutes. Then roll it for a long time, smear the stuffing + 20g of mixed nuts. Leave a gap at the bottom, press it thin and roll it up. Cut into pieces, 2cm thick.

3️⃣The second rise is at 35 degrees, 40 minutes.

4️⃣Brush the milk and sprinkle with sliced almonds/crushed pistachios/powdered sugar. Set oven to 170-200 degrees, 18 minutes.

5️⃣Let it set on 100 degrees for 15 more minutes and you’re done!
