Bread dough does not stick to Kitchenaid 5qt

Something is bugging me and I need to fix. When I make bread doughs in kitchenaid mixer the dough ingredients just pool to the bottom of the bowl. It acts like when you use playdough and add liquid to it.
Do I add more flour? Do I just let it hook just going around and it will eventually catch?
I know it has to form gluten but not sure how it does when the hook is just hitting the top of the flour liquid ball at the bottom.
I think once I master that my bread will be better and not so tough.
