AI with clean beach, entertainment, walkable shopping?

Hi everyone! I'd like to take an older family member for a surprise trip in either April or early May and this will be their first time at an AI. Possibly the first time out of the country. (They do have a passport.)

I looked at the pinned spreadsheet which was really helpful, but these are a few specific things I'm hoping to find:

  • Pretty, clear water not as likely to be filled with seaweed/ sargassum if we can avoid it.

  • My family member is not into active adventure but I think they would love things like free art classes, language lessons and evening shows. Leisure entertainment so they have something to do besides eat and drink.

  • I like how certain parts of Cabo or Cancun have tons of little shops in town within safe walking distance from the AI hotels. (My guest loves souvenir shopping.) Not sure if other places besides Mexico also have this?

Budget roughly $3,000 USD for two people for about a week, not including airfare. Not picky if it's adults only or a family resort but wouldn't want a loud party scene. Open to Mexico, Caribbean, or Central America but not Cuba.
